Ingredients:
- 1 block (14 ounces) firm tofu, drained and cubed
- 2 tablespoons soy sauce (for marinating tofu)
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 carrot, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 green onions, sliced
- 2 tablespoons soy sauce (for sauce)
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1/4 cup vegetable broth or water
- 1 teaspoon cornstarch (for thickening sauce)

Instructions:
- Prepare the Tofu:
- Drain the tofu and press it to remove excess moisture. Cut it into 1-inch cubes.
- In a bowl, toss the tofu cubes with 2 tablespoons of soy sauce and let marinate for 10 minutes.
- Sprinkle the marinated tofu with cornstarch and toss to coat evenly.
- Cook the Tofu:
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the tofu cubes and cook until golden and crispy on all sides, about 8-10 minutes. Remove the tofu from the skillet and set aside.

- In the same skillet, add the remaining 1 tablespoon of vegetable oil.

- In a small bowl, whisk together 2 tablespoons of soy sauce, hoisin sauce, rice vinegar, sesame oil, vegetable broth (or water), and 1 teaspoon of cornstarch.
- Combine and Cook:
- Return the tofu to the skillet with the vegetables.
- Pour the sauce over the tofu and vegetables, stirring to coat everything evenly.
- Cook for an additional 2-3 minutes, or until the sauce has thickened and everything is heated through.
- Serve:
- Serve the vegetable stir-fry with tofu over cooked rice or noodles.
- Garnish with sliced green onions and sesame seeds.
