Ingredients:

  • 1 block (14 ounces) firm tofu, drained and cubed
  • 2 tablespoons soy sauce (for marinating tofu)
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 carrot, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 green onions, sliced
  • 2 tablespoons soy sauce (for sauce)
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1/4 cup vegetable broth or water
  • 1 teaspoon cornstarch (for thickening sauce)
  • Sesame seeds, for garnish
  • Cooked rice or noodles, for serving

Instructions:

  1. Prepare the Tofu:
    • Drain the tofu and press it to remove excess moisture. Cut it into 1-inch cubes.
    • In a bowl, toss the tofu cubes with 2 tablespoons of soy sauce and let marinate for 10 minutes.
    • Sprinkle the marinated tofu with cornstarch and toss to coat evenly.
  2. Cook the Tofu:
    • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
    • Add the tofu cubes and cook until golden and crispy on all sides, about 8-10 minutes. Remove the tofu from the skillet and set aside.
  3. Cook the Vegetables:
    • In the same skillet, add the remaining 1 tablespoon of vegetable oil.
    • Add the garlic and ginger, and sauté for about 30 seconds until fragrant.
    • Add the bell peppers, broccoli, snap peas, and carrot. Stir-fry the vegetables for about 5-7 minutes, or until they are tender but still crisp.
  4. Make the Sauce:
    • In a small bowl, whisk together 2 tablespoons of soy sauce, hoisin sauce, rice vinegar, sesame oil, vegetable broth (or water), and 1 teaspoon of cornstarch.
  5. Combine and Cook:
    • Return the tofu to the skillet with the vegetables.
    • Pour the sauce over the tofu and vegetables, stirring to coat everything evenly.
    • Cook for an additional 2-3 minutes, or until the sauce has thickened and everything is heated through.
  6. Serve:
    • Serve the vegetable stir-fry with tofu over cooked rice or noodles.
    • Garnish with sliced green onions and sesame seeds.
